Paleo Almond Butter Zucchini Brownies

Ingredients
  

  • 1 cup almond butter
  • 2 cups grated zuchinni 2 small or 1 large
  • 1/3 cup raw honey
  • 1 large egg
  • 1 cup cacao powder
  • 1 tsp baking soda
  • 1/2 tsp vanilla
  • 1 cup dairy-free chocolate chips (I use MadeGood brand)

Chocolate Glaze

  • 1/4 cup coconut oil melted
  • 2 tbsps raw honey
  • 2 tbsps cacao powder
  • 1/3 cup chopped walnuts optional topping

Instructions
 

  • Preheat your oven to 350 degrees and line a 9x9 pan with parchment paper or grease.
  • In standing mixer or large bowl with a hand mixer, combine all ingredients until completely incorporated.
  • Spread your batter in your lined (or greased) pan. Bake for 30 minutes or until a toothpick comes out clean. 

Chocolate Glaze

  • While your brownies are cooling, melt your coconut oil in a small pot on the stove.
  • Whisk in the raw honey and chocolate until well combined.
  • Spread mixture over brownies and let harden before serving. Top with chopped walnuts (optional)
