I come to you guys with another super delicious treat that is loaded with veggies, protein and super foods. This recipe is also Paleo as advertised, so you know what that means…. it’s dairy free and gluten free! I whip these brownies up and they’re gone within hours. This one I also love getting the kids involved in, why? because it’s so simple and easy to throw together and provides a controlled opportunity to introduce the idea of exploring vegetables in new ways. My oldest as I’ve mentioned has always had a difficult relationship with food so any chance I get where I can inform him that the “just because it’s green doesn’t mean it’s yucky” concept is false, ill take it.
As everyone knows, the shelves that are filled with chocolate and candy as you’re checking out your groceries at the store are your kid’s favorite part of the whole trip. Every single time we go through the check out Lincoln begs and begs for a kinder egg (this is his new kick right now). Though with his dairy intolerance we try our best to keep him away from any of that stuff and give him more dairy friendly treats! Ever since we got his (unofficial) diagnosis we have been pretty strict about keeping dairy as far away from that kid as possible due to the recent health struggles he’s been having because of it. Of course we’ve had little slips here and there but nothing really prepares me for the mom guilt I feel every time I have to tell him no when he asks for that kinder egg which him and I both know he wants so badly! I figured there has to be a way to treat this kid every once and a while without giving him anything that could potentially give him discomfort but nothing lame like when your mom tells you to “eat an apple” when you tell her you’re hungry. Don’t get me wrong, apples are MY candy but still every kid and adult loves something sweet from time to time!
Enter, delicious veggie brownies. I got Lincoln to help me put this recipe together and explained to him that these treats wouldn’t hurt his tummy but in fact help it feel better and will benefit every other part of his body as well! He loved that idea. These are a perfect substitute for any sweet tooth looking for a chunk of chocolate to sink their teeth into.

Paleo Almond Butter Zucchini Brownies
Ingredients
- 1 cup almond butter
- 2 cups grated zuchinni 2 small or 1 large
- 1/3 cup raw honey
- 1 large egg
- 1 cup cacao powder
- 1 tsp baking soda
- 1/2 tsp vanilla
- 1 cup dairy-free chocolate chips (I use MadeGood brand)
Chocolate Glaze
- 1/4 cup coconut oil melted
- 2 tbsps raw honey
- 2 tbsps cacao powder
- 1/3 cup chopped walnuts optional topping
Instructions
- Preheat your oven to 350 degrees and line a 9×9 pan with parchment paper or grease.
- In standing mixer or large bowl with a hand mixer, combine all ingredients until completely incorporated.
- Spread your batter in your lined (or greased) pan. Bake for 30 minutes or until a toothpick comes out clean.
Chocolate Glaze
- While your brownies are cooling, melt your coconut oil in a small pot on the stove.
- Whisk in the raw honey and chocolate until well combined.
- Spread mixture over brownies and let harden before serving. Top with chopped walnuts (optional)
