Bacon Split Pea Soup

I will say this till I am blue in the face. The BEST part about fall and winter seasons is the comfort food. I used to be and still sort of am an emotional eater.. and one of the main types of meals I would turn to would be soulful, filling, and belly warming foods. For instance, a good stew or soup. I absolutely love curling up on the couch with a warm blanket, put on a wicked binge worthy Netflix serious and drown myself in a yummy and comforting soup.

I am lucky enough that Travis’s mom is not only a very experienced cook (and great one I might add) but she also has in her possession all the traditional German recipes HER mother created and swore by! She gave me a pretty basic stock recipe, and then a popular by demand soup recipe her boys used to love that their Omi (her mother) used to make all the time.

I changed a few of the ingredients, only by quality really and came up with a delicious-stuff-my-face-while-I-sit-by-my-window-and-watch-the-rain-come-down soup! I even got the stamp of approval from Travis, which is HUGE because like I mentioned, his mom knows her way around a kitchen and this recipe has been in his family for years. Needless to say, I’m feeling pretty confident! I hope you guys enjoy it as much as we do.

Bacon Split Pea Soup

Ingredients
  

  • 4 cups Chicken broth organic
  • 4 cups Beef broth organic
  • 1 lb Bacon chopped. cooked
  • 1 Cauliflower (small) chopped into cubes
  • 2 cups Split peas organic
  • 2 Carrots chopped
  • 3 Celery stalks large, chopped
  • 1/2 White onion chopped
  • 3 Garlic cloves minced
  • 2 Chicken bouillon cubes
  • 2 tbsps Coconut oil, or ghee

Instructions
 

  • Chop your garlic, onions, carrots, celery and cauliflower and set aside.
  • In a large pot heat your oil over medium heat and add your garlic and onion. Cook until your onion is translucent. In a separate pan cook your bacon, once its cooked drain the grease and set aside. (If you’d like you can add the bacon to the garlic and onions once the onions are translucent if you’re looking to save on dishes.)
  • Next, throw in your celery. cauliflower and carrots. saute until tender. 
  • Once your veggies are tender, add your bouillon cubes and mix until well combined.
  • Add your broth and bring the soup to a boil. Once boiling, set the heat to low or simmer and add in your split peas and bacon. Cover and let simmer until the peas have expanded while stirring consistently. 
  • Serve and enjoy!
